"It's in Your Hands" is a video guide to composting restaurant food waste. With over 26 million tons of food disposed of annually and restaurants representing 30% of that waste, it is clear that we have an opportunity to better leverage this valuable and reusable resource.

One example from the film: Scoma's restaurant, a famous San Francisco "Fisherman's Wharf" restaurant, discusses some of the benefits, challenges, and successes of composting. "We do 14.9 million dollars in annual gross sales, and we are considered the largest restaurant West of the Mississippi. It's just a matter of making a choice. And, it's like I told the staff, here's how we're gonna do it. You're gonna throw it away anyway. Just learn where to throw it. It's the difference between here and here. It's not like I'm asking you to go across, you know, the kitchen or across the way to throw things away, it's right there. Stop making excuses and be part of the solution!" Scoma's now diverts over 90% of their food waste into composting facilities.
"It's In Your Hands" provides inspiration and education through a series of interactive interviews with restaurateurs and composting experts. It includes segments on site visits to a waste management company and industrial composting facility that supplies much of the soil used in Napa and Sonoma vineyards. Through this video, restaurants and food service organizations can further engage and educate staff about composting, thereby maximizing the organization's composting efforts. The video is designed for all staff levels and includes subtitles for Spanish speaking employees.
